Dunkin' Donuts

Designed and Built for Dunkin' Donuts, this project is a 33,100 total square foot central manufacturing location (CML) bakery.

This project includes a 22,900 SF central manufacturing bakery with a 10,200 SF expansion for increased production capacity. The main facility features 18,100 SF dedicated to food production, product staging, sterilization, and shipping, along with a 4,800 SF office space. The expansion adds 9,000 SF for food production and 1,200 SF for baked goods finishing, ensuring seamless operations during construction while the existing bakery remained fully functional.

Both the original facility and the expansion are equipped with wash-down capabilities, featuring stainless steel panels, FRP panels, epoxy floors, and trench drains for efficient sanitation and hygiene. The bakery includes production lines for mixing, proofing, frying, glazing, and finishing baked goods, with the expansion further enhancing this capability.

Utility upgrades support the increased demand, including a 1,500-gallon grease interceptor for the main facility and a 750-gallon interceptor for the expansion. The air handling system includes 15,500 CFM kitchen exhaust hoods in the main facility and an additional 4,100 CFM hood for the expansion.

Additional features include a 30-yard waste compactor, steel reinforcements for air handlers and hoods, and NEMA 4X electrical components in all wash-down areas. The facility also has a 500 KVA diesel generator for backup power, ensuring uninterrupted production in all conditions. This comprehensive setup is designed to support high-volume bakery production while maintaining safety and operational efficiency.
